2016: The year of the salad.
I have to tell you the truth. Eating right is difficult for me. Beginning in 2016, I my weight had ballooned to an unhealthy 165 pounds. I know, the picture on this blog is very friendly. In fact, the picture was taken when I was only 120 pounds. And 5 years younger! But what the heck, I like the picture.
Anyway, 2016 was a really tough year for my dieting. The weight had ballooned because I was working too hard, and simply not finding any time to exercise and eat right. So in January of 2016 I decided to make the entire year...the year of the salad. Lets talk about what happened during the year.
On January 15, I cleaned out my refrigerator and pantry. Everything processed went into the trash can. I felt sort of guilty for being wasteful, but I simply needed to make a change.
Next, I began shopping DAILY at a local grocery store that specialized in organic vegetables and fruits. Thank god for the many websites on the internet that specialize in salad recipes and salad dressings.
I discovered that after 3 weeks of eating mainly salads, that my revulsion for bottled salad dressing was more than what this woman could handle. So, I learned to become an expert at making dressings. Thank goodness for my dear old (young) friend, Katy Meyers. She sent over some of her favorite salad recipes and homemade recipes for salad dressings. The next two months were much easier.
So how did I do with my weight loss? Lets go over the numbers...
